Taylor Clark Professional Cookery Level 5
Taylor Clark has always been passionate about cooking and when he left school in 2016 he knew he wanted to learn more about the food industry. He applied for Professional Cookery Level 5 at West Lothian College and 17 year old Taylor hasn’t looked back since.
All hospitality students spend time working in the award winning Terrace Restaurant located on campus giving them the opportunity to gain first-hand experience of a busy restaurant environment. Taylor found this to be a huge factor in his development.
“I loved the fact that I was working in a real restaurant with real customers while getting taught by lecturers who I think are absolutely brilliant. It gave me an idea of what to expect when I start working full time.”
While working in the Terrace was no doubt a highlight of Taylor's year, he doesn’t have to think too long about what stands out most.
“I was selected to go on a two-week trip with 9 other students to Odense in Denmark as part of an Erasmus Plus trip. We stayed in a catering college and attended classes during the first week, and in Week 2 we were working in placements. I worked in the kitchen of the Gastro Pub which I really enjoyed. The whole trip was fantastic! I had never been abroad before and I learned so much from the experience. I will definitely be travelling again soon!”
In the meantime, Taylor has secured a part-time job as a sioux chef in a high class Edinburgh restaurant while academically he has progressed onto the Professional Cookery Level 6 course here at the College. When asked if he had any advice to those considering their next move and wondering if college is the right move,Taylor was quick to offer the following advice:
“I totally recommend taking a chance and going for it! College is all about opening doors to you that you maybe haven’t even thought about before. I never ever thought I would be working in a restaurant in Denmark but it happened!”
